In the early days of rail travel there were no dinng cars, so people traveling on the Santa Fe would stop at Harvey Houses for their meals. Typically, passengers had 20-30 minutes to eat before the train departed. The waitresses, known as Harvey Girls, served delicious food, most of which had been grown and raised on Fred Harvey farms and dairies.

When dining cars did appear on trains, the tables that were set were often elegant. Representative china can be viewed near the Fred Harvey exhibit.
