In the early days of rail travel there were no dinng cars, so people traveling on the Santa Fe would stop at Harvey Houses for their meals. Typically, passengers had 20-30 minutes to eat before the train departed. The waitresses, known as Harvey Girls, served delicious food, most of which had been grown and raised on Fred Harvey farms and dairies.
